The founders of the British chocolate company, Hotel Chocolat, bought 140-acre Rabot Estate in St Lucia so they could grow their own organic cacao. However, the sheer beauty of the estate’s location, high in the Soufrière Hills, overlooking the Caribbean and the twin Pitons, with the verdant rainforest behind, soon convinced them to share the chocolate-box setting with the rest of us.
This dreamy, breeze-cooled boutique hotel is the result. Rabot Hotel offers just 14 rooms, a spa, Rabot Restaurant and Cacao Bar. As you would expect, the emphasis is very much on the Food of the Gods: from the creamy hot chocolate served at breakfast to the cacao-infused lunch and dinner menus and even the cacao-oil lotions used in the spa. It’s the perfect location if all you want to do is kick back and relax with a rum punch and a bar of salted caramel. Equally, Rabot makes an excellent base for exploring the rest of the beautiful island of St Lucia, with the famous ‘walk-in’ volcano and sulphur baths close by and the white sands of Anse des Pitons a short hop away by complimentary shuttle bus.
