Of all the Provençal hill towns overlooking the Côte d’Azur, the market town of Vence exhibits the most medieval charm. Here, the Château Saint-Martin & Spa occupies a castle above the walled city, used by Crusaders returning from Jerusalem and, in 1150, the Knights Templar. Muted earthy tones and floral print flow through its airy rooms, suites and villas, many with French doors begging to be flung open onto private balconies with matchless views.
Downstairs, find Michelin-starred Mediterranean fare served on the terrace and a more relaxed setting in the olive grove, with a wood-burning oven and grill; and a La Prairie spa par excellence. Days can easily be spent wandering the vast grounds, taking in its contemporary art trail, terraces and huge infinity pool surrounded by olive trees. Provençal bliss.
