For the last 25 years the Bolza dynasty have carefully and painstakingly restored the farmhouse of this sprawling estate on the border of Umbria and Tuscany. Now the main castle itself has had a makeover, and locally crafted materials have been used to refurbish the family home into a 36-room boutique hotel. Think terracotta flooring, marble bathrooms and hand-stitched linens in swathes of green, grey and red. Relax in the light and airy guest rooms overlooking the rolling countryside, the Castello Suites with their bespoke furniture, the San Michele Suites with private gardens adjacent to the San Michele Arcangelo church, or the Grand Suites with vast stone fireplaces. The showstopper is the two-bedroom Tower Suite positioned over five floors with its own roof garden and open-air tub from which to admire the far-reaching views. Each room is curated to reflect the characters who have lived in the castle walls in past centuries - spot the Archbishop of Todi’s coat of arms above the entrance. Delve into the bathhouse in the castle’s cellars to soak in the plunge pool in the depths of the three-storey tower or relax in the heated cave; the former ice room.
