Day 1 Trondheim
Fly to Trondheim situated on a fjord along Norway’s central coast. It is buzzing with students, Gothic architecture from the Middle Ages and a vibrant local restaurant scene. Check in at the newly renovated Britannia Hotel, the city’s finest establishment since 1870. Its formidable spa and skybar have been updated in chic contemporary style, along with 259 rooms (topped by 11 suites). Having breakfast in its grand Palm Court will be an outstanding start to your next three days.

Day 2 Trondheim
Kayak along the Nidelven river this morning, between rows of picture-perfect houses leading to calm waters and forest banks that will seem like they were waiting just for you. After a two-course lunch, explore the Kunsthall Trondheim’s fiercely thought-provoking contemporary art collection where you will have a private guided tour.

Day 3 Trondheim's farm-to-table scene
Focus on Trondheim’s food scene in earnest, visiting a small biodynamic farm, one of the many suppliers that support the strong farm-to-table movement here. Dine at Credo, a restaurant that is equally passionate about ingredients, drawing from all around the Trøndelag region. Dairy, flavour and sustainability drive chef-owner Heidi Bjerkan’s menus: a magnificent 20 to 25 courses that change according to the produce available that day.

Day 4 - 6 Self-drive to Stokkøya
Collect your hire car and make your way north on a two to three-hour drive over fjord and ferry, past vast lakes, rocky hills and open skies. Trøndelag's beautiful scenery will ease you in to the next few days, full of long walks, cycling and kayaking - and plenty of fresh coastal air. On Stokkøya island you will stay in a sleek oceanside apartment with phenomenal views, or a minimalist subterranean house that is dug into the sand and has glass doors that open towards the sea - achingly cool and very much unique. Your evenings will be fuelled by the freshest seafood at the beach bar, governed by the catch of the day.

Day 7 - 8 The Golden Road
The Golden Road is a scenic detour around Inderøya, a peninsula with undeniable charm. Besides communing with nature, along the way you will encounter a cooperative of businesses dedicated to sustainability: farms, galleries and boutiques where locals will welcome you with tales of the region and intimate experiences of its culture. You will be based in a boutique country farmhouse, renowned for its Nordic simplicity and local menus.
While travelling through Inderøya, taste local beer and aquavit, the Scandinavian spirit distilled since the 15th-century with caraway and dill, which lends its particular flavour. On one of your evenings dine at Øyna, an exceptional restaurant designed to blend in with the surrounding landscape, serving thoughtfully constructed dishes of regional produce.

Day 9 Frosta
Continue driving south to Frosta, where the fjord continues to supply both natural and culinary delights. Settle in at a homely farm hotel, and strike out on foot to its brewery: housed in the ruins of Tautra's monastery ruins from 1207. The island is also home to a community of Cistercian nuns, who live further round the island.
