The award-winning Peruvian chef models his cuisine around sustainable, rainforest-to-table ingredients. Taking inspiration from traditional Amazonian recipes, he creates unique dishes such as scallops with wild almonds and imari fruit, yucca gnocchi and ceviche made with freshly-caught paiche.
